He was born and raised in Darien, Connecticut, and was inspired to play after seeing Henrik Lundqvist suit up for the New York Rangers. He attended Avon Old Farms for one year and Darien High School for another before enrolling in the USA Hockey National Team Development Program in 2018.

He was selected by the Panthers in the first round and played college ice hockey for the Boston College Eagles after setting a program record by winning 59 games in just two seasons. During his sophomore season with Boston College, he was recognized as the Hockey East Goaltending Champion and Player of the Year. He was also a two-time finalist for the Mike Richter Award.

To join the Panthers to finish their 2020–21 season, he left Boston College in 2021. He made his NHL debut the day after turning 20 and became the first goaltender born in the twenty-first century to play for an NHL franchise.

The Tampa Bay Lightning eliminated the Panthers in the first round of the 2021 Stanley Cup playoffs, despite making 36 saves in his maiden playoff appearance. Sergei Bobrovsky and Knight formed a goaltender duo to begin the 2021–22 season, but their inconsistent play made Knight the backup as the season went on.

With NTDP, he captured a bronze medal in Sweden's 2019 IIHF World U18 Championships. In six tournament games, he recorded a 1.51 GAA and.936 SV per cent, winning five and falling to the Russian squad in a shootout in the semi-final round.
